In a dinghy handicap series how do I portray a helm who might use different boats over the same series or different helms using the same club boat so that when the series is scored all competitors are allocated their result for the series no matter which boats have been used.

Hi - You can setup a competitor as normal
You can set the default rating for a competitor and you can also change the rating for any races you wish by right clicking the results cell for that race and competitor
Select the rating tab and you can change the rating as below. You can also click the box to specify to use the new rating for subsequent races until you change it again if you wish.
If you need to know what boats they sailed - I suggest you use an abbreviation in one of the fields of your choice
e.g. S-T-E-E-S could mean Solo Topper Enterprise Enterprise Solo
But certainly the results will be correct as long as you supply the ratings for the races when they are using a different boat than their default.
