The reason you are seeing both a /usr/share/wine/fonts directory and a /usr/share/wine/fonts-old directory is because you had a software update to Wine after you did the fix to get Sailwave to work. Whenever there is an update, the /usr/share/wine/fonts directory gets re-created.

I've got a more refined process that doesn't require any action after Ubuntu does an update to wine, and doesn't require you to eliminate all the standard san-serif fonts, which can be a problem for other programs that use Wine on your machine.
I'll put a tutorial together today and post it.
As for Mac, my understanding is that it requires the installation of WINE on Mac.

Just done some more digging and found the following
openSuSE 11.3 is using WINE version 1.3.19 which includes
winetricks
Ubuntu LTS 10.04 is using WINE version 1.2.2 which does not
include winetricks
There are instructions at WineHQ ()
on how to upgrade WINE to a version that includes winetricks. I will
follow them and report back.

Just followed the instructions at WineHQ and now have Sailwave
working on my Ubuntu 10.94 LTS installation. Slight hiccup as first
use of command winetricks corefonts failed due to connection
problems, but all succeeded at second attempt.
FYI - Just tested your steps on an openSuse installation
(11.3 with all latest patches) after installing latest
WINE snapshot from openSuse repositories and they
worked. Don’t get just vertical bars in drop down list
box for what information to display in grid.

Thanks for prompt reply.
I used the standard Ubuntu repositories, but then went surfing when
things went wrong and found the information at WineHQ to add the
repository you give below. Once this was all done everything worked
properly, as it installs a much newer version of WINE that available
in the standard default repository for Ubuntu 10.04 LTS that
includes winetricks. Interestingly the GUI winetricks does not list
corefonts but if the command line is used then corefonts are
downloaded and installed.

2. Once Fink is installed......
3. Run in terminal fink install wine
4. fink install winetricks
5. winetricks corefonts
6. Then ln -s ~/.wine/drive_c/windows/Fonts/Arial.TTF ~/.wine/drive_c/windows/Fonts/sserife.fon
tried but went lost... Step 1 - 3 seem to worked for me but I am not sure. Deep water here
I could also not install winetricks...
Any more detailed installation?
